Hearty Meat Spaghetti Sauce

This "recipe makeover" from the American Cancer Society substitutes lean beef, halves the amount of oil and adds 1 cup of vegetables to the sauce.

Ingredients

1 Tbsp. vegetable oil
¾ pound lean ground beef
1 onion, chopped
2 cloves garlic, minced
1 (16-oz.) can tomatoes
1 (6-oz.) can tomato paste
1 tsp. dried oregano leaf
1 c. vegetables, such as broccoli; red, green or yellow bell peppers; zucchini; or carrots. (To save time, use frozen precut vegetables.)

Directions

Heat oil and sauté onions and garlic for 3 to 5 minutes. If using fresh vegetables, add and sauté a few more minutes.
Add meat; cook until no longer pink.
Add remaining ingredients (including frozen vegetables); stir, and simmer 1 hour.
Serve with whole-wheat pasta.
Yield: 4 servings.

407 calories, 32 percent of calories from fat, 10+ g fiber, depending on vegetables used.
